In the Kitchen: Mom's Chocolate Chip Cookies

Anyone who has ever had these cookies know just how good they are...hands down, the best chocolate chip cookies I've ever had. They have just the right amount of chocolate and they are the perfect consistency--soft, chewy and never crunchy. My mom has made these cookies for years and constantly gets asked for the recipe and how to make them. If you are looking for the perfect chocolate chip cookie, this recipe is for you!  

Ingredients: 
2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 stick unsalted butter (cold)
1/2 cup shortening
2/3 cup sugar
2/3 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips

Directions: 
Preheat oven to 375°F. In a large mixing bowl, combine the flour, salt and baking soda and set aside. In a mixer, cream the butter, shortening, sugar, brown sugar, eggs and vanilla until smooth. Add the dry ingredients to mixture and continue mixing until combined. Remove dough from mixer and place in mixing bowl. Add chocolate chips and mix until evenly distributed. If dough is not cool, place in freezer for a few minutes to get it cold. Form evenly sized balls of dough and place on ungreased cookie sheet. (I use an ice cream scoop to keep the size consistent). Bake for 8-10 minutes, depending on desired darkness of cookies. Serve warm with vanilla ice cream or ice cold milk. Enjoy!
